BANANA BREAD
INGREDIENTS
- 125g butter (softened)
- ½ cup of caster sugar
- ½ cup of brown sugar
- 1tsp vanilla essence
- 2 eggs
- 3-4 bananas (well-ripened)
- 2 cups of self-raising flour
- 1tsp baking powder
DIRECTIONS
1. Preheat oven to 180ºC and line tin with baking paper.
2. Cream butter, vanilla essence, caster sugar and brown sugar in a bowl until smooth, then beat in eggs and add bananas.
3. Add self-raising flour and baking powder, stir until combined.
4. Pour in to prepared tin and cook for approximately 1 hour, or until a skewer can be inserted and comes out clean. Slice and serve with butter.
